The growing disconnect between the farmer and the table is shocking. We live in a day and age where we really have no idea where or whom our food comes from or what chemicals were used to grow and preserve it. We want it virtually instantaneously and cheap. That is exactly what we have been given. Now ask yourselves, is it worth the rising health problems and the heavy cost associated with treating chronic diseases? Is it also worth the detrimental effects on the environment? Paducah Organic Menu firmly believes it is fundamental that we address these issues within our community.
 Our goal at Paducah Organic Menu is to create an environment in which the local farmer, chef, and patron, are given every opportunity to choose to invest in their health, as well as their local economy . The farmer will be encouraged to grow organic food for the people that live near him. The chef will be encouraged to prepare the freshest and most local organic foods for his menu. And last but certainly not least, the consumer will reward both of them for thinking about their health and well-being. This cycle will lead to greater independence from increasing food cost for both the producer and consumer. Through a general awareness campaign, some friendly competition between local chefs, and some good old fashioned hard work we Paducahians are working hard to close that ever expanding gap between the farm and our dinner plates.
As we increasingly become more  independent of chemical companies and their pesticides and herbicides that poison our food, we will see a renewed sense of pride among the local community. A sense of pride that comes from the knowledge that progressive communities like Paducah Kentucky can reclaim that simple agrarian lifestyle that will benefit everyone involved.
